Identification of key aroma compounds for cat and dog palatability

Cat and dog palatability enhancers are very sophisticated ingredients, with powerful flavor properties. They significantly contribute to the final taste and odour of the food, thus playing a decisive role in pet food acceptance.

Palatability experts from Symrise Pet Food designed a study to understand why certain palatability enhancers are preferred to others, with a focus on their composition in volatile compounds.

Palatability enhancers from different species, obtained with different process, were tested for palatability by cats and dogs and analysed for their aroma profiles. The study led to the identification of several classes of key volatile compounds differently appreciated by cats and dogs.

These results give strategic information for new developments of highly palatable products. Manufacturing process or raw material selection can for instance be oriented for a production of specific palatable aroma compounds.
