Cooking with eggs: how to improve texture in wet pet food using a new sustainable binder

Reaching the perfect wet pet foods texture can be challenging, especially in products that are formed and cooked, and then cut, sliced, or shredded. Binding agents are widely used to achieve the desired physical effects in-process and the visual aesthetic that pet parents expects.
Egg whites are highly desirable binders for reasons of label appeal, performance, and nutrition. Their use in pet food, however, is constrained by economics and the ethics of sourcing food grade material for pet food purposes.
During his conference, Ingmar Middelbos, Nutrition Global R&D Director for Symrise Pet Food, will evaluate how a sustainable petfood-grade egg-based binder functions like, but solves the traditional hurdles of, food-grade egg whites. Manufactured without additives from Category 3 egg materials these specialty binders exceed the gelling strength of food grade egg whites by as much as 2X. In addition to improving texture, reducing fines and shrink, and ease of use, these products also retain the high-quality amino acid profile of egg, thereby simplifying overall formulation.
